| Saying Grace... An Offering of Gratitude |

What happened to saying grace before meals?
Maybe
you grew out of the habit, maybe you were never
taught
to say grace, or maybe you only do so on special
occasions. A feeling of appreciation for the enjoyment
and nourishment of a good meal is natural, but we
seem to be losing the tradition of grace, and as we do,
something deeper, more subtle and satisfying to the
heart, is also being lost.
Part of that loss is our fading awareness of our
connection with the world around us. According to the
yogis, we are indebted to that which nurtures and
supports our lives. Offering up a prayer of gratitude
and thanksgiving before a meal is one way of repaying
that debt. But in the modern world, food materializes
from plastic wrappers, cardboard boxes, and
aluminum cans. When lunch is delivered in a
Styrofoam carton, it is easy to forget the richness of
the
soil, the sweetness of the rain, and the heat of the sun
that brought the meal to our table. A cereal box
doesn't inspire the same feeling as a field of wheat
rippling in the sun; a display of perfectly shaped wax
apples stacked under the neon lights of the
supermarket doesn't call to mind the bounty of the
tree; and a plastic jug of homogenized milk doesn't
remind us of the cow that provided it. Food becomes
just another commodity, and the expression of
gratitude seems old-fashioned and meaningless.
If you have forgotten how to say grace, or never
learned, consider making it part of your mealtime.
This simple and easy practice can be intensely
fulfilling. It is helpful to wash your hands before you sit
down to eat, not only for the obvious reasons of
cleanliness, but also as a means of making a mindful
transition from other activities to the act of eating.
When you sit down at the table, sit up straight. Look at
your food. Close your eyes and become aware of your
breathing. Mentally and audibly recite your prayer,
remaining attentive to the significance of the words
you chose to speak. Then, eat and enjoy! Let yourself
be fully gratified.

Healthy Highlights for the Grill: Grilled Pork Tenderloin with Pineapple Salsa |

DID YOU KNOW...
The tenderloin is the leanest and most tender cut of
pork. When the external visible fat on pork is removed
before cooking, the result is a cut of meat that
compares to chicken in calories, cholesterol and fat
content.
Pork is a nutrient dense food, which means it has a
high level of nutrients in proportion to its calorie
content. It contains a high level of some of the
essential B vitamins, such as B12, B6, thiamin, niacin
and riboflavin. It is also rich in other nutrients, such as
phosphorous, zinc, potassium, iron and magnesium,
which are important to our daily diet. Our bodies
require a certain amount of protein daily and the body
does not store protein so we need to replenish it each
day. A 3-ounce portion of pork provides approximately
half of our daily requirement for protein.
Our bodies also require fat in our diet, which allows
us
to absorb vitamins that are fat-soluble and energy
producing. But, too much fat is not healthy and will
increase our cholesterol levels. Some cuts of pork are
as low or lower in fat than chicken and over half of the
fat is unsaturated fat, the type that helps lower
cholesterol. Any cuts from the loin are good lean
selections. Remember to always buy organic, natural,
hormone & antibiotic free meat.
GILLED PORK TENDERLOIN with PINEAPPLE
SALSA
2 (1-lb) pork tenderloins, trimmed of fat and silver
skin, natural, hormone and antibiotic free.
6 tablespoons olive oil
1 tablespoon ground chipotle chili powder
2 teaspoons salt, plus a pinch
1 teaspoon freshly ground black pepper
1 teaspoon dried Mexican oregano, crumbled
1 1/2 tablespoons minced garlic
3 tablespoons fresh lime juice
1 pineapple, peeled and cut crosswise into 1/2-inch
slices
1/4 cup finely chopped red onion
2 jalapeno peppers, seeded and minced
2 tablespoons minced red bell pepper
1 tablespoon finely chopped fresh cilantro leaves
Fresh cilantro sprigs, for garnishing
Cilantro Oil, for drizzling, (recipe follows)
Preheat a grill to high.
Rub the pork tenderloins all over with 3 tablespoons
of
the olive oil, then sprinkle evenly with the chipotle chili
powder, 2 teaspoons of the salt, the pepper, and the
oregano. Rub the tenderloins well with the garlic and
drizzle the lime juice over all. Allow the tenderloins to
sit, refrigerated, for 45 minutes before cooking.
Brush the pineapple slices lightly with 1 tablespoon of
the olive oil, then place the pineapple slices on the
grill and cook, turning occasionally, until softened
slightly and nicely marked by the grill, 2 to 3 minutes
per side. Remove from the grill and allow to cool to
room temperature. Dice the pineapple slices (discard
the tough core portions) and place in a medium non-
reactive bowl. Add the red onion, remaining 2
tablespoons of lime juice, remaining 2 tablespoons of
olive oil, remaining pinch of salt, jalapeno peppers,
red bell pepper, and chopped cilantro and stir to
combine. Set aside while you grill the pork.
Place the tenderloins on the hottest part of the grill
and
cook, turning occasionally, until well browned on all
sides, about 10 minutes. Reduce the grill temperature
to low and continue to cook, turning occasionally, until
a thermometer inserted into the center registers 145
degrees F. Remove the tenderloins from the grill and
allow to sit, loosely covered, for 5 to 10 minutes before
serving.
Slice the tenderloins on the diagonal and serve with
the grilled pineapple salsa and fresh cilantro sprigs.
Drizzle with Cilantro Oil.
Cilantro Oil
1/4 cup fresh cilantro leaves
2 tablespoons fresh mint leaves
1/2 cup extra-virgin olive oil
Salt and pepper
Place herbs in a mini-chopper and blend. Slowly add
oil to emulsify. Season with salt and pepper.
Serves 4

YOGA for BACK PAIN RELIEF
A good, regular yoga practice will go far in
relieving the
stress and tension that cause back pain. Studies
have shown that, when done properly, yoga is
the number one most
effective remedy for relieving back pain.
However, not all yoga poses alleviate back pain, and
some can aggravate existing discomfort. It is vital to
know which poses will be most helpful in reducing
back pain. Connie will show you which poses are
most
appropriate for your specific situation. In addition, she
will help you learn how to
properly perform poses to strengthen the spinal
column, diminish the occurrence of injury, and
increase recovery time.

Gentle Beginner's Yoga-
This class teaches beginner's gentle hatha yoga
poses in combination with breath, stretching and
relaxation. Students will recognize a definite
strengthening and lengthening of their bodies with
more confidence and proper alignment in their
practice, safely and effectively. This class is perfect
for those: completely new to yoga (or it has been a
long time) or those who prefer a much more gentle
style of class.
Tuesday & Thursday at 10:30 am
Yoga Levels 1 & 2 - Incorporate
fluid movements
with deep, rhythmic breathing.
Linking movement
with breath enhances the health
benefits of each
pose including greater muscular
strength and
tone,
increased flexibility and joint
mobility,

circulation and hormonal balance, as
well as,
creating
a more focused, calm and
meditative state of awareness. This
class
incorporates the fundamentals of
step-back sun
salutations, standing poses, hip-
openers, seated
poses, and twists, while
incorporating traditional elements

guidance for

yoga, this class incorporates different yoga
disciplines every 8 weeks to expose students to a
wide range of styles allowing them experiences to
take forth to other studios and classes. This class
includes inversions such as shoulder stands, head
stands, plow pose, and back bends. Of course,
participation in these poses are totally optional.

"Am I worshiping other gods during
yoga?"
I am surprised how often I get this question. The
answer is absolutely not. In order to worship "another
god" you must set your intention to do that. The
coordinating of your breath with movement and
calming
your mind during yoga does not equate with the
worship of a god. Some people think that chanting the
sound of "om" before and after some classes is the
same as praying to some other god. This is not the
case. "Om" means peace and is actually derived from
the word "Amen" and studies have shown that the
vibration created while chanting the word "om" actually
begin to calm the mind and the heart rate. Sana Vida
and the practice of yoga is open to all religions and
spiritual practices. Please come to us with your
questions of matters such as this because education
and an open mind are beautiful things!
